Thinlandia Good-For-You Anytime Pancakes!
8 egg whites
1 2/3 cups old-fashioned oats, ground in food processor to make approximately 1 1/4 cups of ground oats
1 cup plain nonfat yogurt
1/4 cup toasted wheat germ
1 t baking powder
2 packets of Truvia or other low cal sweetener, to taste
Vanilla, few drops or to taste
Cinnamon if desired, to taste
Salt or Also Salt™ to taste
Preheat pan or griddle to medium heat (about 325-350 on a griddle).
Whiz all ingredients together in blender.
Spray griddle or pan with nonstick spray.
Fill a 1/4 cup measure and pour batter into rounds on griddle. This makes pancakes appropriately sized to later reheat in a toaster.
Makes 12 5-6″ pancakes.

Single Serving High Protein Even Simpler Breakfast Pancakes:
2 egg whites

1/4 cup cottage cheese
1/4 t baking powder
Half a packet of Truvia or other low cal sweetener, to taste
Cinnamon if desired, to taste
Mix up, spray your griddle or non-stick pan with butter-flavored Pam, and pour the whole thing in there as one gigantic pancake.
Makes one healthy serving!
