Made them again today, but used Extra Virgin Coconut oil for the 1 T of oil, used 2 eggs and 2 egg whites, and used 1/3 cup organic sugar and 1 1/2 T NuStevia for the sweetener (as I am now trying to stay away from Splenda due to its chemical nature). FABULOUS! Just as great!

Well-written. Thanks. I have been learning a lot about ethnic cooking lately. There are a lot of creative recipes using rice out there, the trick is finding one that really brings out the flavor of the rice you are using. If you'd like to see my blog it's here. Thanks again for this blog - it is really educational.

Donna, I'm so excited to try these! I LOVE black beans. They're one of my all-time favorite foods. I've seen recipes similar to this before - not just with brownies and beans - incorporating good, fiber-ful foods. The cinnamon applesauce makes sense. The instant coffee makes sense. Me & my hubby have had a similar trip as you and yours, however we got the T-shirt in Plumplee and moved on to Fatopia. At this point I'd be content to just move back to Plumplee. I love your website and plan to vist often! Thanks!

OK. So I needed to make this today and I only had two eggs! Here's what I did. Used the two eggs, added 1/2 a banana, and increased the baking powder to 1 teaspoon. I did have to bake it perhaps five more minutes. For only a few calories per serving more, it turned out just as yummy, but with a slight banana flavor. (Think of a banana split with chocolate...)

This recipe really does work, no matter how you slice it! (And I sliced it in nine pieces this time, because I wanted a bigger piece! LOL!)
